Drawing inspiration from his grandfather’s beloved service station in 1950s upstate New York, Chef Ted set out to create a concept that celebrates nostalgia, craftsmanship, and exceptional flavor.

We've got some big news to share with you!!!

After 15 successful years of serving the community through Moe’s Original BBQ Fort Collins, owner Ted Schneider and wife Ryan Corley are embarking on a new culinary journey. Our beloved restaurant will be transformed into Schneider’s Schnitzel Service, offering a fresh and unique dining experience in Old Town Fort Collins.

Chef Ted has decided to turn the page to the next chapter and is looking forward to continuing his culinary journey by creating this new menu and atmosphere.
Schneider’s Schnitzel Service will feature a reimagined interior inspired by his grandfather’s cherished 1950s fuel service station in upstate New York. The restaurant is designed to evoke nostalgia while celebrating craftsmanship and exceptional flavor.

The new menu will highlight pork and chicken schnitzel, a staple in German and Austrian cuisine. Guests can also look forward to house-made specialties, including duck-fat melted cabbage, deviled eggs, brisket kielbasa, chive spätzle, and dishes that reflect Schneider’s Wisconsin heritage: cheddar bratwurst, cracker-crusted walleye, and Wisconsin cheese curds.

Moe’s Original BBQ Fort Collins will officially close on February 8, 2025, with Schneider’s Schnitzel Service expected to open its doors in late March 2025. We look forward to seeing all of our wonderful friends and fans enjoy their Moe's favorites before we close, and again when we debut the new concept! THANK YOU FORT COLLINS! ❤️

Chef Ted has been fascinated with food for his entire life. Artistic by nature, he was studying for a graphic arts degree when he realized he was more passionate about cooking for his roommates than studying other forms of art. He moved to Vail in 1993 and worked various kitchen jobs, beginning on the line and coming to realize that he had an inborn talent for analyzing flavors and creating inventive combinations. After working as a breakfast chef for a private retreat and cooking for everyone from CEOs to a prime minister, Ted took what he credits as the job that most shaped him as a young chef with the Grouse Mountain Grill. He stayed with Grouse Mountain for 10 years, eventually working his way up to Executive Chef, and still considers the owners and previous Executive Chef as his primary mentors in the field. During his tenure, Grouse Mountain hosted, among other events, the Bon Appetit Beaver Creek Culinary Festival for several years. Ted has had recipes published in Bon Appetit magazine and several cookbooks.

Ted went on to open the food and banquet facilities for a new hotel in the heart of Vail Village, and from there, he ran a country club restaurant for a brief time. After these two experiences in a more corporate environment, Ted was eager to have more control to create his own stamp on a place. He had long been a fan of Moe’s Original BBQ in Vail and spoke with the founders about opening a restaurant in Fort Collins. Moe’s Fort Collins opened in January of 2010.

Ted found that Moe’s gave him the ideal combination of freedom and structure; thriving on creating Moe’s everyday fare, but having enough time and creative energy to devote to special events. His multi course pairing dinners, which he offered several times a year under the Full Pull Supper Club banner, met with breweries’ and patrons’ unanimous acclaim and are known for elevating both food and craft beer in a 1+1=3 equation.
